  2. Fry sultanas and cashews in 2 tablespoons of ghee till brown. In the same ghee fry half cup of onions till crispy. Set aside
  3. In a saucepan add 4tablespoons of ghee and sauté all whole spices till aroma releases. Add diced ginger and remaining onion and sauté till they soften
  4. Add rice to the pan and sauté for 3 to 5 minutes in low flame
  5. Add water to and salt according to taste. On tasting the water it should be a bit salty. Keep covered on low flame. Stir occasionally
  6. Once water evaporates completely, turn off the stove and keep covered for 20 minutes
  7. After 20 minutes stir the rice with a flat spatula adding drizzle of ghee in between
  8. Garnish with fried onions cashews and raisins and coriander leaves
