- Toss the beef with 1 teaspoon of the oil, ½ teaspoon of the cornstarch, ½ teaspoon of the salt, and the sugar, soy sauce and white pepper. Cover and refrigerate for 20 minutes.
- Blanch the broccoli in boiling water until tender, about 1 minute. Using a slotted spoon, transfer to an ice water bath to cool, then drain and set aside.
- In a small bowl, mix 2 tablespoons of the chicken stock, the oyster sauce and the 1 tablespoon of cornstarch. Set aside.

- Pour in the remaining 2 tablespoons of chicken stock. When it comes to a boil, add the cornstarch mixture and cook until the sauce thickens and all the ingredients are nicely coated, about 30 seconds. Dish out and serve immediately with steaming-hot rice.
