- 2 tbsp cornflour
- 1 small cauliflower
- 200 g green beans
- 4 cloves garlic really finely chopped

- 4 tsp dark soy sauce
- 2 tbsp siracha
- 2 tsp sesame oil
- 3-4 tsp lime juice
- Salt, pepper, oil
- 1 red chilli finely sliced
- 20 g fresh basil rougly chopped

- Preheat the oven to 180 degrees C. Break the cauliflower into bitesized florets, coat in a little oil, salt and pepper and roast in the oven until golden brown.
- Squeeze as much liquid out of the block of tofu as possible and cut into small cubes. Add a pinch of salt and pepper to the cornflour, mix and coat the tofu in flour.
- Add 1 tbsp oil to a heavy based frying pan (I used a cast iron one) over a medium/high heat. Add the tofu and cook until golden brown. Turn occasionally so that all sides get cooked.
- Meanwhile, blanch the green beans (put them in cold water and bring the pan to the boil and drain. you want them to still have a crunch) and make your sauce by combining the lime juice, dark soy, sugar and siracha in a bowl
- One the beans and cauliflower are ready, add them to the pan with the tofu along with a little more oil and turn up the heat. Once the oil is hot, add the chopped garlic and ginger. Fry for 2 minutes and then add the sauce mixture. It will start to reduce and become sticky. At this point, add the chopped chilli and basil. Give everything a good mix, remove from the heat and serve with rice.
